    Blackberry Cobbler Is a Berrylicious Summertime Delight — Easy 5-Ingredient Recipe

    With berry season in full swing, it’s only right to incorporate this fruit into a variety of dishes. One berrylicious treat we love making is blackberry cobbler as it features softened fruit and a fluffy cake topping. Unlike other cobblers, this blackberry variation doesn’t require a ton of prep before it’s baked. In fact, it’s as simple as pouring batter into a greased dish and topping the mixture with whole blackberries — that’s it. Read on for the recipe to this easy yet wow-worthy summertime treat!

    You can make cobbler with any kind of fruit, including fresh peaches , but some varieties require peeling and chopping beforehand. Luckily, preparing blackberry cobbler is hassle-free as the berries are tossed whole into a batter containing sugar, butter, milk and flour. Then, it’s baked until the top is golden brown and the fruit is soft.

    Lorene Sauro, RHN , registered holistic nutritionist and author of A Pastry Queen Goes Green , notes that cobbler was a dessert born out of necessity around the 19th century . “It was created from seasonal fruits using ingredients that were handy at the time, and it took less time to prepare than a traditional pie,” she says. This rings true even today as cobbler allows you to enjoy blackberries at their flavor peak.

    Baker’s shortcut to a fluffy cobbler topping

    Leavening agents like baking powder help baked goods rise and have an airy texture. But, to save time use self-rising flour in the batter as it contains flour, baking powder and salt. This way you’re adding all three ingredients to the mixture simultaneously and can proceed with the recipe. Although self-rising flour is available in the baking aisle, it’s simple to make from scratch as well. “You can make your own self-rising flour by combining 1 cup all-purpose flour with 1 teaspoon baking powder and 1 teaspoon salt,” Kristyn Merkley , founder and blogger at Lil’ Luna , explains. With the help of this baking shortcut, your cobbler will have a light and spongy topping every time.

    An easy blackberry cobbler recipe

    Merkley’s Blackberry Cobbler recipe is a great toss-together baked treat for any occasion. While fresh blackberries are ideal for this dessert, frozen berries are fine to use too. Avoid letting the berries thaw as it will cause their juices to leech out too earlier, creating a watery cobbler. Also, you can combine the blackberries with other fruit for an extra tart and vibrant center.

    Ingredients:

    • ¼ cup butter, melted + more for greasing
    • 1¼ cups sugar + 2 Tbs.
    • 1 cup self-rising flour
    • 1 cup whole milk
    • 2 cups blackberries, washed and patted dry
    • Whipped cream or ice cream (optional)

    Directions:

    • Yield: 10 servings
    1. Preheat oven to 350°F. Generously grease 9-by-13 baking dish with layer of melted butter.
    2. In medium bowl, add flour, milk, and 1 cup of sugar. Whisk until combined, then mix in ¼ cup melted butter.
    3. Pour batter into buttered baked dish. Evenly drop rinsed and dried blackberries over top of batter. Sprinkle ¼ cup sugar over blackberries.
    4. Bake about 1 hour, until golden brown and bubbly. During last 10 minutes of baking, sprinkle remaining 2 Tbs. sugar over top. Remove from oven and allow to cool slightly.
    5. Serve portions of warm cobbler in bowls with whipped cream or ice cream — or both (if desired)!
