    Cool Summer Corn Salad

    This crunchy corn salad is perfect during the hot days of summer. Try it as a side to grilled items like babyback ribs, chicken, or veggies.

    Ingredients

    • 6 ears fresh, shucked corn
    • 1 tablespoon shallot or red onion, chopped
    • 1 clove garlic, minced
    • 1 tablespoon fresh basil, minced
    • 1/4 cup extra virgin olive oil
    • 1/4 cup sour cream
    • 1/4 cup buttermilk
    • 1 teaspoon sugar
    • 1 English (or other) cucumber, quartered lengthwise and thinly sliced
    • Salt & fresh cracked pepper

    Directions

    1. Blanch corn in salted boiling water (about 3 minutes).
    2. Remove to ice bath to cool.
    3. When cool enough to handle, cut kernels off cobs and set aside.
    4. Combine shallot, garlic, basil, olive oil, sour cream, buttermilk, and sugar in a large bowl. Whisk.
    5. Add corn and cucumbers to the dressing and season with salt and black pepper.
    6. Mix well and refrigerate.
    7. Toss well before serving.

    Serves 6.
