    Sesame Chicken-Vegetable Stir-Fry Recipe is an Easy + Delicious Weeknight Dinner Winner

    After a busy day at work, I’m always hungry for a satisfying, yummy dinner that comes together fast. Sometimes I’ll order takeout — I love a good stir-fry — but the cost can really add up. That’s when I get out my pots and pans and start cooking. But the truth is, until recently, I hadn’t ever made a stir-fry, and I wasn’t sure I was up to the task. So when our test kitchen came up with this sesame chicken-vegetable stir-fry recipe, I was so excited! It’s quick — just 25 minutes from start to finish —and it’s really easy to make. In other words, it’s the perfect weeknight meal.

    Plus this dish is healthy with chicken tenders and lots of nutrient rich veggies, like carrots and peppers, Best of all, it’s super tasty! The stir-fry sauce gives it tons of flavor, and the sesame seeds add some nice crunch. Give this recipe a try and let us know what you think.

    • 8 oz. chicken tenders
    • 2 Tbs. sesame oil
    • ½ cup shredded carrots
    • ½ cup red or orange pepper strips
    • ½ cup stir-fry sauce
    • 1 Tbs. sesame seeds
    • 1 scallion, sliced

    Instructions

    Cut chicken tenders into 1"–11⁄2" pieces; reserve.

    In nonstick skillet, heat oil over medium-high heat; add chicken and veggies. Cook, stirring, until veggies are soft and chicken is no longer pink, 6–8 min. Stir in sauce until hot. Top with seeds and scallion. If desired, serve with rice noodles.
