Few things are more tasty than fresh corn on the cob when it’s in season. Each crunchy bite bursts with summer flavors and goes perfectly with any grilled dish. This nostalgic staple also has a way of transporting us back to our childhood.

While there are many terrific ways to prepare it, this technique is ideal for a night when you’re short on time. Check out this video from July 7 to see this chef’s easy and foolproof method.

This almost sounds too good to be true! But with Chef Rose Reisman’s (@ rosereisman ) expertise, we can be confident that this method is a winner. She tells us we don’t need to boil a giant pot of water to prepare our corn. Not only does that method take 10 to 15 minutes, but we also lose all the nutrients and sweetness. Instead, she shows us we can use a frying pan with approximately an inch of water brought to a boil. The pan she was using held about three full ears of corn. Once they were inside and the water was boiling again, it was covered and steamed for 2 minutes. She shows us it is perfectly cooked with its sweet flavor intact. That’s impressive! She notes we can also include salt when boiling the corn or add it afterward.

    Ways to Use Fresh Corn

    1. Freeze it . If you find a few terrific ears of corn and want to preserve their flavor for the winter months, try this speedy method for blanching them. Then, chill the corn in an ice bath before slicing off the kernels and storing them in a freezer-safe container.

    2. Corn chowder. Add potatoes, cheese, bacon, sausage, and your favorite spices to make a creamy and comforting soup.

    3. Cornbread, fritters, or muffins. These are all tasty ways to enjoy this summer vegetable, and they go perfectly with a variety of barbecue foods.

    4. Mexican street corn salad. Although this tasty dish is usually made with grilled corn, Rose’s gourmet canned corn trick could also be applied here. After your corn has cooked, cut it from the cob and toast it in a hot frying pan to achieve those browned pieces. Then, add lime juice, Cotija cheese, mayonnaise, and chili powder to make a salad.

    5. Corn salsa, risotto, creamed corn , and pancakes. These are a few more tasty ideas to use this veggie.

With so many culinary possibilities, having a few bags in the freezer never hurts. It will be nice to have a bright taste of summer when January arrives to help get us through those long, dark winter days.
