    How to Make the Best-Ever Soft Scrambled Eggs, According to Bobby Flay

    We love watching Bobby Flay’s cooking shows, and it would be a dream to have him whip up a delicious meal for us. We’ve always been curious about the do’s and don’ts of professional cuisine and Bobby has been a wealth of information over the years. Between his clever sweet and spicy bbq sauce and his controversial opinion on steak doneness , we're always all ears when Bobby drops a cooking tip.

    While behind the scenes filming an episode of his latest Food Network show, Bobby’s Triple Threat , the celebrity chef shared a video showing how he makes soft scrambled eggs for two of this season's Titans. What started as a fun quip about how his job is to “make sure everybody’s nourished,” turned into Bobby showing viewers how he makes the best-ever soft scrambled eggs step by step. And you know we were taking notes.

    How to Make Soft Scrambled Eggs Like Bobby Flay

    After whisking eggs in a large mixing bowl, Bobby tells viewers to start by adding eggs to a cold pan with crème fraîche and butter. The crème fraîche and butter add some delicious fat (and flavor) to the eggs. The higher fat content makes the eggs less prone to curdling—and also makes them more delicious. And as for the cold pan start? This helps you control the cooking and makes it easier to create the beautiful silky soft scrambled eggs you see in fine-dining restaurants.

    Bobby places the pan over medium heat, telling viewers to “bring the temperature up slowly,” which helps the eggs cook slowly and retain their custardy texture. In the video, he stands at the stove constantly stirring the egg mixture in a circular pattern with a spatula while the pan heats up, creating silky ribbons of egg.

    Once the eggs are nice and fluffy and still pretty moist, Bobby transfers them to a plate where they finish cooking as they set. To help retain the silky texture, Bobby recommends waiting till the end of the cooking process to season the eggs with salt. He then garnishes the eggs further with feta cheese, rocoto chile and some cheffy style micro greens. The eggs are delivered to Titans Brooke Williamson and Tiffany Derry, who are big fans. "I love it," says Derry. "Best eggs you've ever had in your life, baby."
