    Summery Mixed Greens and Mozzarella Salad Recipe is Refreshing, Cheesy + Delicious

    On warm days I crave a crisp salad. It’s the perfect side dish on a summer evening. But not just any old salad will do — I want something luscious and full of flavor. That was the inspiration for our mixed greens and mozzarella salad recipe. For this terrific toss we combine mixed greens with mozzarella balls, cherry tomatoes and black olives, and then whip up a tangy oil and vinegar dressing with mustard and garlic for extra flavor. The dressing brings the greens to life, and it’s an excellent backdrop for the rich creaminess of the mozzarella balls. For some texture and crunch, we top the salad with pine nuts. It’s so good! Every bite is the perfect combo of flavors.

    This salad is the ideal side dish for a summer supper of steak or burgers. Or you could eat it as a light light with some crusty bread. Or do both! Give this recipe a try and let us know what you think.

    • 3 Tbs. olive oil
    • 1 Tbs. balsamic vinegar
    • 1 Tbs. Dijon mustard
    • ¼ tsp. garlic powder
    • ¼ tsp. salt
    • ¼ tsp. pepper
    • 1 (5 oz.) pkg. mixed baby salad greens
    • 1 cup cherry size (ciliegine) fresh mozzarella balls, halved
    • 1 cup cherry tomatoes, halved
    • ⅓ cup drained pitted black olives
    • 2 Tbs. pine nuts, toasted
    • Toasted French bread slices (optional)

    Instructions

    In large bowl, whisk together oil, vinegar, mustard, garlic powder, salt and pepper. Add salad greens, mozzarella balls, tomatoes and olives; toss until combined. Sprinkle with pine nuts. If desired, serve with toasted bread.
