    Tips for making the best crème brûlée croissant

    These tips will help you create a bakery-worthy treat that looks as good as it tastes.

    1. Choosing the right croissants

    Use large, rounded croissants that have a flaky, buttery texture. If you can, buy them from a bakery for optimal freshness. You can also use smaller, straight croissants, but be mindful of how much you pipe into them.

    2. Making the sugar mixture

    Your sugar is properly caramelized when it turns a light amber color. Avoid stirring to prevent crystallization; instead, gently swirl the pan. Use tongs to dip the croissants and be careful, as the sugar gets very hot.

    3. Preparing the crème filling

    Avoid curdling your custard on the stove by immediately taking it off the heat once it thickens. You also want to chill both the custard and whipped cream so they don’t melt when combined.

    I followed @grasiankim’s video tutorial above, which makes 6 croissants. But you can halve the recipe if you want fewer.

    Ingredients

    • Pack of croissants
    • 1 cup sugar
    • 1 cup water
    • 1 Tbs. corn starch
    • 2 Tbs. sugar
    • 1 cup heavy cream
    • 2 egg yolks
    • 1 tsp. vanilla extract
    • 1 cup heavy cream
    • ¼ cup powdered sugar

    Directions

    • Total Time: 30 minutes
    • Yield: 6 croissants
    1. Add the sugar and water to a small sauce pan and cook on high heat until bubbling and amber in color. Then, bring the heat to low to avoid burning and dip your croissants to coat. Set aside to harden.
    2. Add the cornstarch, sugar, heavy cream, egg yolks and vanilla extract into a sauce pan and mix until smooth. On medium low heat, stir the custard until thickened, then take off the heat. Transfer to a bowl, cover and chill in the fridge.
    3. In a separate bowl, combine heavy cream and powdered sugar and whisk until stiff peaks form before chilling. Once both are chilled, carefully fold the whipped cream into the custard.
    4. Cut out small holes in the sides of each croissant with a knife, then pipe in the crème filling using a spoon, piping bag or plastic bag with one tip cut off.

    Storing instructions

    These crème brûlée croissants are best enjoyed immediately. But if you want to store them, keep them in an airtight container at room temperature for up to a day. Avoid refrigerating, as the croissants can get soggy.
