    Dirty Rice (w/ or w/o Chicken Liver?)

    I prefer it without the chicken liver, however, I left it in the recipe because YOU might love it that way. Let us know in the comments if you like the liver or not.


    Dirty Rice Recipe


    Ingredients:

    • 1 cup long-grain white rice
    • 2 cups chicken broth
    • 1 tablespoon olive oil
    • 1/2 pound ground pork sausage (or ground beef)
    • 1/2 cup chopped chicken livers (optional, for a traditional flavor)
    • 1 medium onion, finely chopped
    • 1 bell pepper, finely chopped
    • 2 celery stalks, finely chopped
    • 3 cloves garlic, minced
    • 1 teaspoon paprika
    • 1 teaspoon dried thyme
    • 1 teaspoon dried oregano
    • 1/2 teaspoon cayenne pepper (adjust to taste)
    • Salt and black pepper to taste
    • 2 green onions, chopped
    • 2 tablespoons fresh parsley, chopped (optional)

    Instructions:

    1. Cook the Rice:
      • Rinse the rice under cold water until the water runs clear.
      • In a medium saucepan, bring the chicken broth to a boil.
      • Add the rice, reduce the heat to low, cover, and simmer for about 15 minutes or until the rice is cooked and the liquid is absorbed.
      • Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork.
    2. Cook the Meat and Vegetables:
      • In a large skillet, heat the olive oil over medium-high heat.
      • Add the ground pork sausage (or ground beef) and cook until browned, breaking it up with a spoon as it cooks.
      • If using chicken livers, add them now and cook until they are no longer pink, breaking them up as they cook.
      • Add the onion, bell pepper, and celery to the skillet. Cook for about 5-7 minutes, until the vegetables are softened.
      • Stir in the garlic, paprika, thyme, oregano, cayenne pepper, salt, and black pepper. Cook for another 1-2 minutes until fragrant.
    3. Combine and Serve:
      • Add the cooked rice to the skillet with the meat and vegetable mixture. Stir well to combine everything evenly.
      • Cook for another 2-3 minutes until the rice is heated through and has absorbed all the flavors.
      • Stir in the green onions and parsley (if using).
    4. Serve:
      • Serve hot as a main dish or as a side. Enjoy your flavorful Dirty Rice!
