    The Pioneer Woman's Easy Confetti Blondies Are a Fun Twist On This Classic '90s Dessert

    Birthday parties in the ‘90s involved pizza, a big pitcher of Koolaid, and homemade confetti cake. The cake was the best part — each bite of fluffy, sugary goodness was filled with sprinkles and icing. There was nothing better. And while confetti cakes may no longer be in vogue (c’mon millennials, let’s bring them back!), Ree Drummond (aka, The Pioneer Woman) has a new dessert recipe that will satisfy the confetti cake-sized hole in your heart.

    The Pioneer Woman shared her super easy and delicious Confetti Blondies recipe to the Food Network YouTube Channel recently. Start like you would any good cookie recipe: by mixing melted butter and sugar together in a bowl. She adds a couple more wet ingredients, then takes out another bowl for dry ingredients. From there, Drummond slowly combines the dry and wet together, folding it in. It might not be as easy as a box cake mix, but it’s still super simple!

    Next, it’s time to add the crucial ingredient: colorful sprinkles! “The sprinkles kind of bake in the blondies and some of them start to burst open a little bit, and then you have these beautiful colors all throughout the Blondies,” she explains. “They are so much fun!”

    Bake the dessert in a parchment-lined square baking pan, which will make for a thick and yummy treat. Since there’s no confetti cake without icing, Drummond makes her own icing for this recipe as well. She uses powdered sugar, butter, and other ingredients, which mix together in an electric mixer. When the frosting is “light and fluffy,” she adds sprinkles for even more colorful fun.

    “Sprinkles make everything better,” she comments, as she adds a light dusting of even more sprinkles on top of the frosted treat. She served them chilled and cut into 2-inch squares, looking absolutely delightful — and totally easy to serve at parties!
