Inspector Notes: Observed crab cakes, steak, cooked chicken, and béchamel sauce in front of walk-in to be cold-holding over 41 degrees in walk-in cooler (see temperature log). Observed ambient temperature in front of walk-in cooler to be 43 degrees and 40 degrees in back of walk-in cooler. Observed build-up on wire shelving inside of walk-in cooler.

Inspector Notes: Obserevd downstairs dish washer not dispensing enough chlorine sanitizer (less than 10ppm.) Sanitizer bottle was full and observed solution moving through the tubing. Observed ambient temperature inside downstairs refrigerator exceeding 41F. Unit had canned crab meat and unopened containers of dressings (blue cheease, caesar, italian, etc.).
