    Here are Thurston County food safety scores for July 17

    Comments are taken directly from the latest Thurston County Public Health and Social Services (PHSS) inspection reports, which are available for each food establishment, at the Thurston County Environmental Health Office and their website .     Reading inspection scores:

    • Attention should be given to the type of violation (red versus blue) and whether the establishment has a history of red violations or repeat violations.
    • Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Example: not keeping food at the right temperature.
    • Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Example: a worn floor that needs replacing.
    • If red points exceed 45, the county will require a reinspection within 10 business days. A reinspection also is required if total red and blue points exceed 65.
    • If red points exceed 100 and there’s a lack of managerial control, the county will shut down the establishment for at least 72 hours. The establishment may reopen after management and employees complete retraining and demonstrate corrective action during a reinspection.
    • Some common abbreviations: PHF/TCS is potentially hazardous food/time control for safety; RTE is ready to eat; PIC is person in charge; FWC is food worker card; CDI is corrected during inspection.

    July 10: 35 red points; 8 blue points.

    Comments:

    • A container of beef stock was covered during the cooling process.
    • TCS food items were warmer than 41 degrees in the cookline. The person in charge discarded the temperature abused TCS food items after they had been there for over 12 hours.
    • A reach-in cooler measured 47 degrees rather than at or below 41 degrees.
    • A TCS clam chowder container was out-of-date. TCS food must be date marked and kept for only seven days, including the day it was cooked. The person in charge discarded the item.

    July 8: 25 red points; 5 blue points.

    Comments:

    • Hot-held roasted chicken pieces were measured at 121-130 degrees rather than 135 degrees.
    • A role of provolone was measured at 50 degrees because it was kept out too long during slicing.
    • One of the sliding doors to the hot case was not in place, causing foods to drop in temperature.

    Buffalo Wild Wings

    1614 Black Lake Blvd. SW, Olympia

    July 9: 10 red points; 13 blue points.

    Comments:

    • Floor sweeping equipment was stored in front of a hand sink. Hand sinks must be easily accessible at all times.
    • Thawed queso sauce in a prep unit was held at 49 degrees after being thawed in the sink earlier that morning. The inspector advised the establishment to thaw foods in the refrigerator from the previous night as needed.
    • A contact sanitizer solution was too strong as prepared.
    • A glassware wash machine had no sanitizer content.
