Do you love traditional comfort foods? I know I do, and even though I may be almost 50 years old, there are some classics I still can’t get enough of. For example, I regularly have peanut butter and jelly and never say no to a crispy grilled cheese.
Even something like hotdogs, which I don’t indulge in often, start the summer off ideally, just as they did when I was a kid. So when I saw the idea for a grilled cheese hotdog, I knew it had to be exceptional, and it is.

Are you trying these?! Well I can say first hand that this is yet another genius creation from my man Brad over at @chilesandsmoke ! It’s the perfect hybrid food that is very much toddler approved! I swapped out the candied jalapeños for bacon, because he is still working on his spice tolerance 😂 I used the @SLOTDOG to get the hot dogs ready for the griddle! Then I fired up the @recteq SmokeStone and Just cook on medium low until your desired level of char/doneness! For the seasoned cheese, I used @Dudes Gourmet Honey Chipotle seasoning, and that was an amazing choice in my opinion! Perfect balance of sweet and spicy! I used a blend of Cheddar and Monterey Jack cheese! Mike (@ alfskitchen ) may have just prepared the most delectable-looking hotdog I’ve ever seen. He shares he got the idea from @chilesandsmoke viral grilled cheese hot dogs , but he swapped out the jalapeños for bacon for his son’s picky palette. And both chef’s versions look equally incredible! Lucky for us, making them is pretty simple.
First, he places chopped bacon on the grill and cooks it to a golden crisp.
Then, he perfectly cooks each hot dog, ensuring a crispy snap of the casing.
Next, he freshly shreds two blocks of cheese, one cheddar, and one Monterey Jack. Then he seasoned it with a honey chipotle spice blend. OMG! That sounds incredible! Then, he places the hot dog in the bun, putting the bacon bits over the top of the hot dog and then another generous portion of cheese.
Finally, it’s time to hit the grill, and he begins with the cheese side down to ensure he achieves that crispy fried cheese. Even more enticing, he reports these dogs are fast and easy to prepare. Sign me up!
Just like Mike tweaked the original recipe to suit his son’s taste, we can customize these dogs however we’d like now that we have the idea. Adding sauteed onions, sauerkraut , or even chili might be a fun way to go. Even pulled pork or brisket with barbecue sauce might be a hit! Fortunately, there’s still plenty of summer left to try any combination you can dream of. And if you don’t have honey-chipotle seasoning in the kitchen, a drizzle of hot honey or regular honey with red chili flakes could also make these dogs sing.
Thankfully, because of the ingenuity of both these chefs, I now have an easy item to add to next week’s menu. I have no doubt that this creative twist on the classic hot dog will quickly become a new summer tradition.
