    Buffalo Cauliflower Bites

    Invented in Buffalo, New York, Buffalo wing sauce adds zing to more than just wings. Pair it with roasted cauliflower for a delicious, healthy snack.

    For this simple, four-ingredient recipe, you can use store-bought Buffalo wing sauce or make your own. I've included an easy recipe that you can make from scratch.

    Ingredients

    • One medium head cauliflower, cut into bite-sized florets
    • 1 tablespoon cooking oil
    • 1/2 cup Buffalo wing sauce (commercial or homemade, recipe below)
    • Ranch or blue cheese salad dressing, for dipping

    Directions

    1. Preheat oven to 400ºF.
    2. Toss the cauliflower with the oil, and spread it in a single, uncrowded layer in a flat (1" deep), rectangular roasting pan (~15" x 10").
    3. Roast 20 - 25 minutes, stirring once; until tender and lightly browned.
    4. Transfer roasted cauliflower to a bowl and toss with wing sauce.
    5. Serve with dressing.

    Buffalo Wing Sauce

    Ingredients

    • 2/3 cups Crystal or other brand of hot sauce
    • 1 stick butter
    • 1 Tablespoon white vinegar
    • 1/4 teaspoon Worcestershire sauce
    • 1/4 teaspoon cayenne pepper (optional)
    • 1/8 teaspoon garlic powder
    • salt to taste

    Directions

    1. In a small pot, combine hot sauce, butter, vinegar, Worcestrshire sauce, cayenne (if using), garlic powder, and salt.
    2. Over medium heat, bring to a simmer while stirring with a whisk.
    3. When the mixture begins to bubble slightly, remove from heat, stir with the whisk, and set aside until ready to use.

    This recipe makes about one cup of Buffalo wing sauce. The cayenne is how you control the heat; for hotter sauce simply adjust the amount of cayenne you use.
