We’ve said it before, and we’ll say it again: one of the hardest parts of managing every day life is figuring out what the heck to make for dinner every. single. night. Sure, if we had unlimited money we could opt for take-out or delivery, but with everything so expensive these days, we’re always looking for affordable, family-friendly meals that will keep everyone satisfied…and hopefully not take hours to prepare. And nobody makes recipes for exactly this situation quite like Ree Drummond, aka The Pioneer Woman . She’s no stranger to feeding a group of hungry kids, and her cheesy pull apart queso sliders recipe isn’t just family-friendly — it’s also ready in just 30 minutes.

Ree Drummond’s pull-apart queso sliders recipe is cheesy, gooey, meaty, and satisfying, and it uses a technique that makes it easy to cook up a tray of sliders or sandwiches. You’ll need a 12-pack of slider rolls (or King’s Hawaiian Rolls , if you want to pack in even more flavor). Then, rather than separating each roll, keep them attached at the sides, and separate the top half from the bottom half (or, if the rolls aren’t split, cut the sheet of them in half horizontally).

Then, you top the bottom sheet of the slider rolls with your filling. In this case, that’s a mixture of seasoned browned ground beef and diced onions. Then, make a simple cheese sauce from Velveeta and Rotel . Drizzle the beef with the cheese sauce, then add some optional jalapeño slices if your family likes things spicy (you can skip this step for a milder meal). Then, simply add the top buns, brush with butter, and bake until the tops are golden brown and the cheese is bubbling.

As you can tell, this style of slider is pretty much infinitely adaptable. For starters, you could make these pull-apart queso sliders vegetarian by swapping out the ground beef for something like Impossible Meat or Beyond Beef, or you could even used some seasoned black beans or veggie burger patties instead. If your family doesn’t like spicy flavors, you could use a can of chopped tomatoes instead of Rotel, but if they like things even spicier, you can double down on the jalapeño slices, or add some minced chipotles in adobo to the cheese sauce.

But there are so many other types of sliders you can make in a big batch like this, from baked ham and cheese sandwiches to meatball parmesan sliders . Thanks to Ree Drummond, easy weeknight slider recipes can be a part of your regular menu rotation, taking a lot of time and effort out of your nightly dinner responsibilities.
