    If you're lucky enough to land in Paris for the 2024 Summer Olympics you're about to witness the pinnacle of international competition across some of the most exciting sporting events on earth. With all the fanfare and the growing crowds in this special city, odds are you will want to duck the horde and dip into a safe-haven of gastronomy. Le Bristol Paris from the Oetker Collection is one mere turn of the calendar away from celebrating its 100th anniversary—however there are many notable milestones the property is commemorating in 2024—kismet to align with the Paris Summer Games!

    Two revered restaurants on property don Michelin Stars: Epicure (3*) and 114 Faubourg (1*). The level of gastronomy available within this 99 year old hotel takes your expectations and smashes them into a delicious bite you'll wash down with an incredible sip of masterfully paired wine. This is the level they exist on.

    Chef Eric Frechon is celebrating 25 years at Le Bristol Paris this year. Frechon became chef at Le Bristol in 1999 after practicing his métier in the best houses. Notably he was sous-chef to Christian Constant at Le Crillon, where he earned the title of Meilleur Ouvrier de France (Best Craftsman of France). He won acclaim for his bistro at the Buttes-Chaumont, where he had worked as commis chef in 1982. When Frechon arrived at Le Bristol Paris, Epicure already had its first Michelin star, but by 2009, he held three, which he has never relinquished. 114 Faubourg opened at Le Bristol Paris in 2013, guided by Frechon, and was immediately awarded a Michelin star.

    In 2024, 114 Faubourg offers their 10 Years of Michel tasting menu—brilliantly prepared in the auditorium-like kitchen—where a limited number of lucky diners can sit in balcony seating and oversee movements of the chefs masterfully preparing each dish. The only way to further perfect the experience would be to order the wine pairing and put yourself in the hands of the Sommelier team, headed by Baptiste Gillet-Delrieu.

    Last year Baptiste Gillet-Delrieu was appointed Wine Director of the hotel. Gillet-Delrieu began his career as Commis Sommelier at Epicure in 2012 after earning the ‘Chapoutier’ title for Best Sommelier Student in France . In 2019, he took on the role of Assistant Chef Sommelier at 114 Faubourg and was promoted to lead the restaurant’s sommelier team in 2021. Today, Gillet-Delrieu manages the hotel’s prestigious cellar of 100,000 bottles alongside with his team. Frederic Kaiser, Le Bristol Paris’ Food & Beverage Director, comments, “ Baptiste’s excellent interpersonal skills have enabled him to rise through the ranks over the years, always with the goal of providing personalized service to our customers. His expert knowledge of the hotel's wine cellar will make him a priceless resource as Le Bristol’s Wine Director .”

    After dining at 114 Faubourg myself, I came home dreaming of "le oeuf" - s crambled eggs with lobster, creamy head juice with Cajun spices . A dish so textured, full of land and sea elements that playfully call for mineral driven wines, like Sancerre, Chablis, or Blanc de Blancs Champagne. Buy the ticket, take the seat, enjoy the ride. From every angle, 114 Faubourg's staff will dazzle you with visuals, sounds, smells, and tastes to heighten your senses and leave you wanting to return as soon as possible.
