    Recipe: Ingredients:

    • For the Crust:
      • 1 1/2 cups graham cracker crumbs
      • 1/4 cup granulated sugar
      • 1/2 cup unsalted butter, melted
    • For the Blueberry Swirl:
      • 1 cup fresh or frozen blueberries
      • 2 tablespoons granulated sugar
      • 1 tablespoon lemon juice
      • 1 tablespoon cornstarch mixed with 2 tablespoons water
    • For the Cheesecake Filling:
      • 16 oz cream cheese, softened
      • 1/2 cup granulated sugar
      • 1 teaspoon vanilla extract
      • 2 large eggs
      • 1/4 cup sour cream

    Instructions:

    1. Prepare the Crust:
      1. Preheat the oven to 325°F (163°C). Line a 9x9-inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
      2. In a medium bowl, mix the graham cracker crumbs, granulated sugar, and melted butter until combined.
      3. Press the mixture evenly into the bottom of the prepared pan. Bake for 10 minutes, then set aside to cool slightly.
    2. Prepare the Blueberry Swirl:
      1. In a small saucepan, combine the blueberries, sugar, and lemon juice. Cook over medium heat until the blueberries begin to release their juices and the mixture starts to simmer.
      2. Stir in the cornstarch mixture and continue cooking until the sauce thickens, about 2-3 minutes. Remove from heat and let cool.
    3. Prepare the Cheesecake Filling:
      1. In a large bowl, beat the softened cream cheese until smooth and creamy. Add the sugar and vanilla extract, and mix until well combined.
      2. Beat in the eggs, one at a time, mixing until just combined. Stir in the sour cream until smooth.
    4. Assemble the Bars:
      1. Pour the cheesecake filling over the cooled crust, spreading it evenly.
      2. Drop spoonfuls of the blueberry mixture onto the cheesecake layer. Use a knife or toothpick to swirl the blueberry mixture into the cheesecake.
      3. Bake for 35-40 minutes, or until the center is set and the edges are lightly golden. Allow to cool completely at room temperature, then refrigerate for at least 2 hours before cutting into squares.

    Conclusion:

Blueberry Cheesecake Swirl Bars are a delightful combination of creamy cheesecake and fruity blueberry goodness. The swirls of blueberry sauce not only add a burst of flavor but also create a beautiful marbled effect. These bars are easy to make and perfect for sharing at gatherings or enjoying as a special treat at home. Serve chilled and enjoy the harmonious blend of flavors!

We don't eat much desert, but when we have guests I will make something fun like this. It looks delicious and my husband loves blueberries. He is not a cake guy, and with a BD coming up, maybe I will give this recipe a try 👍
