    Ingredients for the filling:

    • 6-7 ripe peaches, skin on, pitted, and sliced into ¼ inch slices
    • 1/4 cup granulated sugar
    • 1 tablespoon cornstarch
    • 1 tablespoon lemon juice
    • 1 teaspoon pure vanilla extract
    • 1/2 teaspoon ground cinnamon
    • 1 tablespoon unsalted butter or non-stick spray for greasing the pan

    Ingredients for crumble topping:

    • 1 1/3 cup all-purpose flour
    • 1 cup packed light brown sugar
    • 1/4 cup sliced almonds
    • 1/2 teaspoon ground cinnamon
    • 1/4 teaspoon kosher salt
    • 1/2 teaspoon ground nutmeg
    • 1/2 cup unsalted butter, softened to room temperature
    • 1/2 cup old-fashioned oats
    • Vanilla ice cream or fresh whipped cream for serving

NOTE: you will need a 9x9 square or round baking pan. Alternatively, you can use an oval baking pan that is roughly the same size.

    Directions

Follow these simple steps to create this perfect peach dessert:

    1. Preheat your oven to 350°F (175°C). Grease a baking dish with a bit of butter or non-stick spray. Set aside.

    2. In a large bowl, combine the sliced peaches, granulated sugar, corn starch, lemon juice, vanilla extract, and ground cinnamon. Mix well to coat the peaches evenly.

    3. Transfer the peach mixture to the prepared baking dish, spreading them out evenly across the bottom.

    4. In a separate bowl, mix the flour, brown sugar, old-fashioned oats, sliced almonds, cinnamon, nutmeg, salt, and butter until it forms a crumbly texture.

    5. Sprinkle the oat mixture evenly over the peaches.

    6. Bake in the preheated oven for 35-40 minutes, or until the topping is golden brown and the peaches are bubbly.

    7. Allow the peach crisp to cool slightly before serving. Enjoy it warm, it is best with a scoop of vanilla ice cream or a dollop of fresh whipped cream.
