    Ingredients:

6lbs of Apples, peeled, cored and quartered

2 Cups of Sweet Apple Cider

    3 Cups Sugar

1 1/2 Tsp of Ground Cinnamon

    Directions:

In a large stainless steel saucepan, combine your apples and apple cider. Bring the mixture to a boil over medium-high heat. Reduce the heat and boil the mixture gently, stirring every few minutes until the apples are soft. This process normally takes around 30 minutes.

Separate the apple mixture into smaller batches and transfer the apples to a food mill or food processor that includes a medal blade. Puree the apples until a uniformed texture is achieved. Make sure not to liquefy the mixture though. You will need 12 cups of apple puree to make the apple butter.

In another clean stainless steel saucepan, combine the sugar, cinnamon and apple puree. Stir the mixture until the sugar dissolves.

Bring the mixture to a boil over medium-high heat stirring frequently.

Reduce the heat and boil gently, stirring frequently until the mixture thickens and holds shape on a spoon.

Prepare your water bath canner, lids, rings and jars.

Ladle the apple butter into the hot jars leaving a 1/4 inch headspace. Remove any air bubbles that may be trapped in the jars by going gently around the inside edges of the jars using a butterknife.

Wipe the rims of the jars off and place the lid and the ring on finger-tip tight.

Place the jars in the canner and make sure that the jars are completely covered with water. Bring the canner to a boil and process for 10 minutes.
