Corrections and clarifications

• Security costs for the Paris Olympics are estimated at $300m, not $300,000 as an article said ( Pièce de résistance saves the show after rain on the Seine , 27 July, Sport, p4, later editions).

• In last Saturday’s Feast section, a recipe for potato, pickled onion and dill salad (p8) omitted to say the onions should be halved and finely sliced before blanching. And in the recipe for chilli braised aubergine (p11), the Sichuan peppercorns should be stirred in alongside the fennel seeds.

• Thomas Eaton’s quiz (29 June, Saturday magazine, p78) gave sparkling wine as the answer to “What type of drink is pét-nat?”. However, pét-nat, short for pétillant naturel, is a production method that can be used with other drinks including cider and perry.
