Grandmaw's Homemade Potato Salad: A Southern Delicacy!

This is my grandmaw's version of potato salad. I have grew up eating this side dish for years and it is so delicious. One of my favorite ways of eating it is with BBQ baby back ribs that have been smoked on the smoker, mac & cheese and a nice dinner roll to go on the side. Also do not forget to add that delicious glass of ice cold sweet tea. Is your mouth watering yet?

Ingredients:

6 Potatoes (peeled and cubed)

1/4 Cup of Onions

1/4 Cup of Pickles

1 Egg (Boiled)

1 Tablespoon of Mustard

1/2 Cup of Mayonnaise

Directions:

Peeled and cube the potatoes into small cubes. Take a kettle and fill it to the half mark with water.

Place the potatoes in the kettle and bring to a boil. Boil the potatoes until the potatoes are fork tender.

Once the potatoes are fork tender, take the kettle off of the stove and strain the water out of the potatoes using a strainer. Place the potatoes back into the kettle. Let the potatoes cool down for a few minutes.

In the meantime boil and peel one egg and chop the egg up.

Add your chopped egg, mayonnaise, mustard, onion and pickles. Mix the ingredients and the potatoes together until the salad is evenly combined and becomes creamy.

You can also add a sprinkle of paprika over the top of the salad for garnish if you would like.

Serve and enjoy!

This can be eaten with ritz crackers and can be served freshly warm or cold out of the fridge.
