    Grilled Pork Chops with Peach Salsa

    This is a phenominal recipe for somertime grilling! Peaches are freshly picked and ripe with full peachy flavored goodness... mixed with a sweet glaze and mild heat, this recipe hits all the senses! It's also surprisingly easy to make. Here's what you'll need:



    Ingredients:

    • 4 boneless pork chops, 1" thick sliced

    Pork Chop Glaze:

    • 1 whole chipotle pepper packed in adobo sauce
    • 1/2 cup honey
    • 1 tsp smoked paprika
    • 1/2 tsp salt
    • 2 tsp fresh garlic, minced
    • 4 Tbl hoisin sauce


    Peach Salsa:

    • 3 large peaches, peeled and diced (about 2 cups)
    • 1/2 medium red onion, diced
    • 1 small jalapeno, seeded and diced
    • 1/2 bunch of cilantro, chopped
    • 1-2 Tbl lime juice


    First, combine all ingredients for pork chop glaze in a blender or food processor and blend until smooth. Marinade pork chops with enough sauce to coat well (using no more than half) in a glass bowl or gallon-sized zip -top bag, removing excess air. Let marinade for at least 30 minutes.

    In a saucepan, simmer remaining glaze until it starts to thicken (about 10 minutes). Remove from heat and allow to cool.

    For the peach salsa, combine all ingredients in a glass bowl and stir well. Add salt/pepper to taste. Cover and set in fridge until ready to use.

    To grill chops: Set grill to 350 degrees and grill for 6-8 minutes on first side, brushing with additional glaze, and flipping to cook on the other side for an additional 6-8 minutes, again brushing with glaze.

    Remove from heat and let rest for a few minutes, then serve with additional cooked glaze and top with peach salsa.
