    Homemade Ham Fried Rice

    Chinese food is one of my favorites. I just never could understand how some places could charge as much for a side of fried rice as I could purchase a whole bag of rice for! It really is simple to make at home, and sometimes, I make extra rice on purpose just so that I can make this the next night. Here's all you need to make 6 servings:

    Ingredients:

    • 3 cups cooked, cold leftover rice
    • 2 large eggs
    • 3 Tablespoons sesame or peanut oil
    • 1 cup frozen vegetable mix (peas, carrots, and corn)
    • 3/4 cup cubed ham
    • 2 Tablespoons low-sodium chicken broth
    • 2 Tablespoons low-sodium soy sauce
    • 3 Tbl Ketjap Manis (Indonesian sweet soy sauce), optional
    • 3 green onions chopped


    Combine chicken broth, soy sauce, and ketjap manis (if using) into a small bowl and set aside.

    Next, heat up one tablespoon of oil in a frying pan or wok. In a small bowl, beat the eggs and then pour them into the heated oil. Once the eggs are just cooked, gently stir them with a wooden spoon, transfer them to a bowl, and then set then aside.

    To the pan, add one more tablespoon of oil. Add the cubed ham, and carrot, peas and corn mix and sautée until heated through, then transfer to the bowl with eggs off to the side.

    Oil the pan or wok once more with the last tablespoon, and turn the heat up to medium-high. Once heated, add the rice and toss until gently browned, about 5 minutes, tossing every 30 seconds.

    Add the green onion and the sauce mix and stir to combine. Add the vegetables and eggs back in the pan and toss together until heated through.

    Add more soy sauce or ketjap manis if desired, and serve immediately and enjoy!

    To make it more of a meal, you can add cooked shrimp or chicken as well.
