    Sweet & Spicy Peach Pork Chops

    The peaches offer a natural sweetness to the sauce with the spices and soy sauce helping balance that sweetness with some spice and umami flavors.

    If you don't speak "foodie" that means the flavors all come together in the slow cooker creating a sauce with a hint of sweetness and spice, waking up boring pork chops.

    What type of pork chops to use?

    For a slow cooker recipe, you want thick bone in chops because they will take longer to cook. Thinner chops might overcook and dry out with the long cooking time.

    If you have thin boneless chops, consider cooking in a skillet instead. Just add the sauce and peaches to the skillet after browning the chops and cook for 20-30 minutes until the pork is cooked through.

    Do you need to sear the pork chops?

    I get it. Who wants to spend time on a cooking step if it isn't worth it.

    Browning the pork chops (or any meat) for a few minutes before cooking in the slow cooker helps give them color and flavor which really adds to the texture and taste in the end.

    You can skip it if you are really pressed for time, just know it will affect the final results.

    Recipe

    Ingredients

    • 1 tablespoon olive oil (or other cooking oil)
    • 4 bone in thick center cut pork chops
    • 15 ounce can sliced peaches
    • 15 ounce can tomato sauce (or crushed tomatoes)
    • 1 cup water
    • 2 teaspoon low sodium soy sauce or tamari
    • 1/4 teaspoon dried rosemary
    • 1/4 teaspoon dried thyme
    • 1/4 teaspoon dried basil
    • 1/8 teaspoon cayenne pepper

    Directions

    Heat oil in a skillet over medium high heat. Add the pork chops. Sear for a few minutes on each side for some color. Place in a 5-6 quart slow cooker.

    Drain the peaches juice into a mixing bowl. Add the tomato sauce, water and soy sauce and stir until blended together. Add the rosemary, thyme, basil and cayenne pepper and stir until blended in. Pour the mixture over the top of the pork chops.

    Place peaches on top of pork chops. Cover and cook on low for 5-6 hours on high until the chops are tender and cooked through.
