    Easy Hash Brown Waffle Breakfast

    Hash browns!! These are some next level hash browns! You can even have your breakfast on the go with these. You can even make them ahead of time then toast them back up in a toaster oven. Here's what you'll need to make 5 hash brown waffles:

    Ingredients:

    • Olive oil cooking spray, for spraying the waffle iron
    • 1, 30 oz bag frozen shredded hash browns, thawed
    • 4 tablespoons (1/2 stick) butter, melted
    • 1 egg*
    • 1 teaspoon salt
    • 1/2 teaspoon freshly ground black pepper
    • 2 - 3 green onions, diced
    • 3/4 cup grated cheese (cheddar or a fiesta blend)
    • 3/4 cup chopped ham or cooked bacon pieces

    Preheat a waffle iron to the regular setting and coat both sides with cooking spray.

    In a bowl, squeeze out any excess moisture from the hash browns. Add the melted butter, beaten egg, salt, pepper, and green onions, and mix well. Scoop a heaping 1/2 cup of the seasoned hash browns into each section of the waffle iron. Layer each section with 2 tablespoons of Cheddar cheese, a layer of chopped ham or cooked bacon pieces, and a sprinkle of green onions. Top with another 1/4 cup of hash browns.

    Close the waffle iron and cook for 15 minutes on the regular setting, until the hash browns are crispy and golden*.

    Repeat with the remaining hash browns, cheese, and ham, filling one section of the waffle iron at a time. Serve while hot with your choice of condiment. (Try ketchup, maple syrup, or sour cream). Enjoy!


    * Notes:

    Since each waffle maker is different, you may have to increase your temperature, cook a little longer, etc. Removing should be easy as long as the cheese isn't leaking out the sides. You may have to losen an edge, then slide a silicone spatula underneath to release easier in one piece.

    You do not have to use the egg, but some have found better success adding a well beaten egg to the hash brown mix to help hold it together and for easier removal, especially if not using enough, or any cheese.
