    Sweet potato cake

    With fall coming in shortly and people thinking of spiced cookies, spiced drinks, and other types of October festive foods. This sweet potato cake always reminds me of October. It does take a little while to make because you have to shred a sweet potato. As we all know they very hard. This will be the most time-consuming thing if you need to grate the sweet potato. If you have a machine that can grade it for you then you are lucky!

    Sweet potatoes have many important vitamins like beta carotene, vitamin C, potassium and high and fiber. A medium size sweet potato has 3.8 g of fiber. Insoluble fibers can have health benefits to improve diabetes and gut health. Sweet potatoes have simple sugars like glucose and fructose. Medium size sweet potato do you have carbs however, they are filled with fiber.

    Ingredients:

    2 cups of flour

    1 1/4 teaspoons of baking powder

    1/2 teaspoon of baking soda

    1 teaspoon of cinnamon

    1 teaspoon of nutmeg

    1/4 teaspoo of cloves

    2 cups of sugar

    1 1/2 cup of RAW sweet potato

    4 eggs ( separated)

    1 cup of oil

    1 1/2 cup of finely chopped pecans

    1/3 cup of hot water

    Ready to make?

    First, you will want to combine all the dry ingredients. Beat the egg whites in a small bowl. In a large mixing bowl combine sugar and oil. Beat well. Now you will add egg yokes. Mix and sweet potatoes and pecans, alternate dry ingredients and water. Now fold in egg whites.

    Grease and flour your cake pan. Place your batter into your 12 cup Bundt pan. Bake in your oven at 350° for about an hour or until it is done.

    Cool in pan on wide rack for about 10 minutes. When your cake is cool, you can sprinkle it with powdered sugar or vanilla icing on top.
