    Easy Blueberry Pie Bars: A Delicious Crust-Filled Dessert

    These amazingly easy Blueberry Pie Bars are a crust, filled, and crumb-topped bars with fresh blueberries dessert. These are so delicious that you can't just stop at one!

    These quick decadent bars with this sweet filling are so simple to make and can be a year-round treat using fresh or frozen blueberries.

    I have been asked so many times to bring these to family gatherings and the recipe is so easy to make. During a sale, we buy large quantities of berries and freeze them for another time.

    Seriously one of my favorite bars of all time and versatile, you can change the berries to any kind you prefer and make a different delicious bar every time you bake a batch.

    Topping:

    • 2 cup fresh blueberries
    • 1/3 cup granulated sugar
    • 2 teaspoons vanilla
    • 1 tablespoon AP flour
    • optional: a pinch of cinnamon

    Filling:

    • 1 egg
    • 1/2 cup plain Greek yogurt
    • 1/3 cup granulated sugar
    • 2 teaspoons vanilla extract
    • 1 tablespoon all-purpose flour
    • Beat together in a bowl and set aside

    Crust:

    • 1/2 cup unsalted butter, melted
    • 1/2 cup granulated sugar
    • 1/4 cup light brown sugar, packed
    • 1 1/2 cups all-purpose flour
    • Mix all together and press half this mixture into the bottom of a parchment paper lined 8 x 8 pan save the rest for the top and set aside

    Instructions:

    1. Preheat the oven to line a baking sheet with parchment paper
    2. Make the cookie dough and reserve some for the top
    3. Make the filling pour over the crust
    4. Mix the ingredients for blueberries and place on the filling
    5. Add the reserved crumbs
    6. Bake at 350 degrees until the top begins to get a golden brown around 1 hour.
