    Magic Butterscotch Pudding Cake: Homemade and Delicious!

    The best of both worlds is that this butterscotch cake, when baked all in one pan, makes its own magic butterscotch pudding sauce. This is an all-made-from-scratch cake and a very old recipe. It's easy to make but takes a little time to get that good vintage butterscotch flavor. The best part is that it bakes together to make this fabulous-tasting puddle of deliciousness!

    Shopping List:

    • 1/4 cup dark brown sugar
    • 1 1/4 cup flour
    • 2 1/2 teaspoon baking powder
    • 7 tablespoons melted butter
    • 1 egg
    • 1/2 cup milk
    • 2 tablespoons maple syrup or dark corn syrup
    • Sauce
    • 2 cups of boiling water
    • 1 tablespoon cornstarch
    • 3/4 cup of dark brown sugar

    Directions:

    1. Preheat the oven to 350 degrees and butter grease a baking casserole cake pan that will hold around 6 to 8 cups.
    2. In a large bowl mix the cornstarch and dark brown sugar and add to the bowl (this is for the sauce/pudding).
    3. In another clean bowl mix, the flour, butter, dark brown sugar, egg, and baking powder and stir then add the milk and evenly blend until no more lumps appear around 1 minute.
    4. Pour this mixture into the buttered cake dish.
    5. Place the water into a microwave-safe glass bowl and boil the water.
    6. Sprinkle the batter with the dark brown sugar and cornstarch mixture then slowly pour the boiling water over the top (not to disturb the cake batter).
    7. Bake in the preheated oven at 350 degrees for around 40 minutes.
    8. Check the middle with a toothpick to see if it comes clean.
    9. The pudding is underneath the cake, so to serve scoop it out and serve with vanilla ice cream or whipped cream.
