    1 pound of Italian sausage { mild or spicy}casting off

    1 bag of sliced carrots

    1 medium onion

    2 stalks of celery

    3 teaspoons of minced garlic

    1 red or green pepper { chopped small}

    1 teaspoon of Italian seasoning

    2 boxes of chicken or vegetable broth

    1 cup of spinach {chopped}

    1 box or bag of ditali or another small pasta

    Parmesan cheese

    Ready to make?

    To make this delicious soup, start by cooking crumbled Italian sausage in a large pot, making sure to remove the casing. Then, add finely chopped carrots, onions, celery, and green or red peppers, and cook and stir for about 5 minutes until the sausage is browned and the onions are translucent. Next, add Italian seasoning and garlic, and cook for one more minute. Pour in the broth and stir the bottom to make sure nothing is stuck to the pan. Bring it to a simmer, then reduce the heat to medium, cover the pot, and cook for around 10 minutes until the vegetables are almost tender.

    While the soup is cooking, cook your pasta separately according to the package directions. When the soup is done, stir in fresh spinach or kale and allow it to cook until it is done.
