    Calories per serving: Approximately 150

    Ingredients:

    • 2 cups semi-sweet chocolate chips
    • 1 can (14 ounces) sweetened condensed milk
    • 1/4 cup unsalted butter
    • 1 teaspoon vanilla extract
    • Pinch of salt
    • 1/2 cup black cherry preserves (preferably from Oregon)

    Instructions:

    1. Prepare the Pan: Line an 8-inch square baking pan with parchment paper, allowing some excess paper to hang over the sides. This will make it easier to remove the fudge later.
    2. Melt the Chocolate Mixture: In a saucepan over low heat, combine the chocolate chips, sweetened condensed milk, butter, vanilla extract, and a pinch of salt. Stir constantly until the mixture is smooth and fully melted. Remove from heat.
    3. Create the First Layer: Pour half of the melted chocolate mixture into the lined baking pan, spreading it evenly to form the base layer.
    4. Add the Cherry Swirl: Drop small spoonfuls of black cherry preserves over the chocolate base. Using a knife or skewer, gently swirl the preserves through the chocolate to create a marbled effect.
    5. Top with Remaining Chocolate: Pour the remaining chocolate mixture over the cherry-swirled layer, spreading it evenly.
    6. Swirl Again: Repeat the swirling process on the top layer to enhance the visual appeal.
    7. Chill to Set: Place the pan in the refrigerator and let the fudge chill for at least 3 hours, or until it is firm to the touch.
    8. Cut and Serve: Once set, lift the fudge out of the pan using the parchment paper overhang. Cut into 16 squares and enjoy the delightful combination of chocolate and cherry.

    Add-ins and Variations:

    • Add-ins: For a crunchy twist, sprinkle chopped Oregon hazelnuts or almonds over the fudge before it sets.
    • Variations: If black cherry preserves are hard to find, try using marionberry or huckleberry preserves to explore other flavors native to Oregon. You can also substitute dark chocolate chips for a richer, more intense chocolate taste.
