    Sausage, Kale and Potato Soup Recipe: Easy and Delicious!

    This soup recipe is one of my favorites and I love to cook it as it such a simple soup to make. You will need the following ingredients;

    Yields about 8 1/2 cups of soup

    Recipe:

    1 pound of italian sausage

    3 pounds of potatoes

    1/2 pound of fresh kale

    3 1/2 cups of chicken broth

    2 teaspoons of salt

    1/2 teaspoon of pepper

    (or add the seasonings to taste)

    Optional: 1 cup of heavy whipping cream and/or a pinch of red pepper flakes

    Preheat a large stock pot to medium high heat and add the sausage and cook until it is browned through.

    Peel, wash, and diced the potatoes into bite size pieces. You can leave the peelings on them if you enjoy them.

    Drain the sausage and add the potatoes, kale, chicken broth and salt and pepper and cook until the potatoes and kale are tender.

    If you are adding the cream, turn down the heat and add the heavy whipping cream and heat the cream up. Tip: If you wish for this soup to be thick and creamy add a slurry of 2 tablespoons of cornstarch and two tablespoons of water. Just mix this together and pour into the hot soup and heat until it reaches the thickness you want.

    I like to add a pinch of red pepper flakes to my soup but this step is totallly optional.

    Note: You can use mild or italian sausage for this dish and if you like breakfast sausage just substitue it.

    I like to serve this with a roll on the side.

    I do pressure can this soup as well as cook a big batches fresh.

    To make it more healthier , leave the potatoes out and use cauliflower
