    Spiced Pumpkin Waffles with Creamy Maple Glaze, Pecans, and Cinnamon


    Ingredients:

    For the Spiced Pumpkin Waffles:

    • 1 ¾ cups all-purpose flour
    • 2 tablespoons granulated sugar
    • 1 teaspoon baking powder
    • 1 teaspoon baking soda
    • ½ teaspoon salt
    • 1 ½ teaspoons ground cinnamon
    • ½ teaspoon ground nutmeg
    • ½ teaspoon ground ginger
    • ¼ teaspoon ground cloves
    • 1 cup pumpkin puree (not pumpkin pie filling)
    • 1 ¼ cups whole milk
    • 2 large eggs
    • ¼ cup unsalted butter, melted and cooled
    • 1 teaspoon vanilla extract

    For the Creamy Maple Glaze:

    • 1 cup powdered sugar
    • 2 tablespoons unsalted butter, melted
    • 2 tablespoons cream cheese, softened
    • ¼ cup pure maple syrup
    • 1-2 tablespoons milk (to thin as needed)
    • ½ teaspoon vanilla extract

    Toppings:

    • ½ cup chopped pecans, toasted
    • Ground cinnamon for sprinkling

    Instructions:

    1. Prepare the Waffle Batter:
      • In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, and cloves.
      • In another bowl, whisk together the pumpkin puree, milk, eggs, melted butter, and vanilla extract until smooth.
      • Gradually add the wet ingredients to the dry ingredients, stirring just until combined. Be careful not to overmix.
    2. Cook the Waffles:
      • Preheat your waffle iron according to the manufacturer’s instructions.
      • Lightly grease the waffle iron with cooking spray or melted butter.
      • Pour the batter onto the waffle iron, spreading it out evenly. Cook until the waffles are golden brown and crisp (usually about 3-5 minutes, depending on your waffle iron).
      • Repeat with the remaining batter, keeping the cooked waffles warm in a 200°F oven if needed.
    3. Make the Creamy Maple Glaze:
      • In a medium bowl, whisk together the powdered sugar, melted butter, and softened cream cheese until smooth.
      • Add the maple syrup and vanilla extract, whisking until fully incorporated.
      • If the glaze is too thick, add 1-2 tablespoons of milk to reach your desired consistency.
    4. Assemble the Waffles:
      • Place each waffle on a plate and generously drizzle with the creamy maple glaze.
      • Sprinkle with toasted pecans and a dash of ground cinnamon.
    5. Serve:
      • Serve the waffles warm with extra maple syrup on the side if desired.

    Tips:

    • To toast the pecans, place them in a dry skillet over medium heat, stirring frequently until fragrant and lightly browned, about 5-7 minutes.
