    Ingredients for Jalapeno Burgers

    • Canola oil, for grill grates
    • 1 1/2 pouds ground beef
    • Kosher salt and freshly ground black pepper
    • 4 slices deli-style pepperoni
    • 1/2 jalapeño pepper, thinly sliced
    • 2 ounces Cheddar cheese, thinly sliced
    • Hamburger buns, lettuce, and desired condiments, for serving

    Directions

Step 1: First, get your grill ready for both direct and indirect cooking and crank up the heat to medium-high. When it’s nice and hot, give the grates a good clean and a light oiling.

Step 2: Next, take the beef and form it into four balls, then flatten them out to about 3/4 inch thick. Press your thumb into the center of each patty to create a shallow, 1 1/2-inch-wide dip. Don’t forget to sprinkle some salt and pepper on top!

Step 3: Grill the patties uncovered over direct heat with the indent side facing up until they’re nicely browned and can be lifted off the grates easily, which should take about 4 to 5 minutes. Flip them over and grill for another 4 to 5 minutes, or until they reach your preferred doneness, aiming for medium. At the same time, toss the pepperoni on the grill, turning them frequently until they start to sizzle and get a bit crispy, which should take around 1 to 2 minutes. Once done, move them to a platter.

Step 4: Move the burgers to the cooler side of the grill and sprinkle jalapeños and Cheddar on top, making sure to share it out evenly. Close the lid and let them cook until the cheese is all melty, which should take about 1 to 2 minutes.

Step 5: Serve on buns topped with pepperoni, lettuce, and desired condiments.
