    Artichoke Quiche: Cheesy and Delicious!

    Quiche is a very popular and great meal because just about anything can go into one and perfect for breakfast lunch or dinner! This artichoke quiche is easy to make with frozen prepared crust and a quickly prepared filling. The cheese can be whatever you prefer however we chose provolone instead of the traditional Swiss cheese. Feel free to adapt the recipe to your preferences.

    Shopping List:

    • 4 eggs, beaten
    • 2 cans of artichoke hearts are put through the food processor leaving it chunky
    • 1-pound
    • 1 cup fresh spinach leaves
    • 1 cup whole milk mozzarella, shredded or provolone
    • 1/4 cup heavy cream or half-and-half
    • 1 cup Pecorino Romano cheese
    • 2 tablespoons chopped fresh parsley
    • salt, and pepper to taste
    • 1 teaspoon granulated garlic powder
    • Optional: 1/2 cup or more of chopped pepperoni, sliced salami, cooked loose sausage or no meat is fine
    • Topping:
    • 1/4 cup Panko Crumbs mixed with a few teaspoons of grated cheese, a sprinkle of granulated garlic powder, and mix with melted butter around 2 teaspoons
    • Note this can be crustless or poured into a store-bought frozen pie crust.

    Directions:

    • Butter a small 8 x 8 or small rectangular baking dish (for a crustless quiche) with butter or if using a pie crust just set it aside until you mix the filling below.
    • Preheat the oven to 400 degrees.
    • Place the chopped artichokes in a bowl with spinach, eggs parsley, black pepper, and garlic powder and mix it well.
    • Add any meat you may prefer like chopped genoa salami, hot capicola, or no meat is fine.
    • Stir in 3/4 cup of Pecorino Romano, and mozzarella cheese around 3/4 cup saving the rest for the top is optional.
    • Pour into the prepared dish (or pie crust) then top with panko mixture.
    • Note: you can top this with shredded cheese in this step.
    • Bake at 375 degrees until golden brown around 30 minutes.

    Meat or Vegetarian Mix-ins

    • Cooked Loose Italian hot or sweet sausage drained
    • Crumbled cooked bacon
    • Chopped seafood of any kind cooked
    • Capicola sliced and chopped
    • Pepperoni chopped
    • Any Coldcut's you prefer (salami, mortadella, roast beef
    • Escarole boiled and rinsed and water was squeezed out
    • Spinach or other greens boiled and rinsed
    • Chopped bell or hot peppers, tomatoes, onions, artichoke hearts, mushrooms, chopped asparagus
