    Kielbasa and Sweet Potato Hash: One Skillet Dish

    I don't care what anyone says, this makes for an amazing breakfast, lunch, or dinner. It is filling enough to satisfy and has great protein to fuel you up for the day. Add in or sub out your favorite veggies and spices as you see fit. Here's what you'll need to make 4 servings:

    Ingredients:

    • 1, 14 oz package turkey kielbasa, sliced into 1/4 inch pieces
    • 1/2 of EACH: green, red, and yellow bell pepper, diced
    • 1 medium onion, diced
    • 1, 12 oz container of fresh sliced mushrooms
    • 2 medium sweet potatoes, peeled and diced *
    • Olive oil, butter, or rendered bacon fat
    • 1/2 tsp garlic powder
    • salt and pepper to taste

    In a heavy-bottomed skillet (a cast iron skillet works great), heat 2 tablespoons of olive oil or bacon fat over medium-high heat. Add the potatoes and season them with salt and pepper. Cook the potatoes, stirring occasionally, for about 8-10 minutes, or until they are golden brown and fully cooked. Transfer potatoes to a plate or bowl while you prepare the next part.

    Next, heat 1 tablespoon of olive oil or bacon fat over medium-high heat and cook the sliced kielbasa for about 5 minutes, or until browned. Remove the kielbasa from the pan and set it aside. In the same skillet, add the peppers and onions, seasoning them with a pinch of salt and pepper. Cook for approximately 5 minutes, stirring occasionally, until they are softened.

    Combine the cooked potatoes and kielbasa with the onions and peppers in the skillet. Stir everything together and serve hot and enjoy!


    * Notes:

    Again, you can sub in or out anything you like or don't like in this dish. Swap out for a different protein, veggies, or seasonings as you see fit.

    You can serve with a side of bbq sauce, sour cream, guacamole, or salsa.
