    INGREDIENTS:

    • ½ lb of ground sausage
    • 1 small yellow onion, chopped
    • 8 oz of mushrooms, sliced
    • 2 cloves of garlic, minced
    • 4 cups of baby spinach
    • 5 cups of low-sodium chicken broth
    • 5 lasagna noodles, broken
    • 1 tsp. of dried oregano
    • ½ tsp. of dried basil
    • 3 tbsp. of butter
    • 3 tbsp. of flour
    • 1 cup of milk
    • 1 cup of Parmesan cheese, grated
    • Salt and pepper to taste

    DIRECTIONS:

    1. Brown the sausage in a large saucepan over medium heat.
    2. Add the onion and mushrooms and cook until tender.
    3. Stir in the garlic and spinach; cook briefly.
    4. Pour in the chicken broth, bring to a simmer for 5 minutes.
    5. Add the broken noodles, oregano, and basil. Cook until tender, about 10-12 minutes.
    6. In a large skillet, melt the butter. Whisk in flour, then milk. Stir until thickened. Then add the parmesan cheese, salt and pepper and whisk until smooth.
    7. Stir the alfredo sauce into the soup. Serve enjoy!
