    Quiche Jambon et Fromage (Ham and Cheese Quiche)

    This was one of my favorite breakfasts in France. The funny thing is, in France, quiche is not usually eaten for breakfast. It's considered a lunch or dinner item. However, in the USA, we tend to think of eggs as a breakfast thing. The little corner shop in France had the best unique quiches with foods I wouldn't have always considered to go together, but they worked so well! For the American palate, I will just stick with a classic ham and cheese flavor today. Here's what you'll need for a 9" pie-sized quiche:

    Ingredients:

    • 1 tablespoon butter
    • 1/2 medium yellow onion, diced
    • 4 eggs, lightly beaten
    • 1 cup half and half
    • Salt and pepper to taste
    • 1 1/2 cups diced ham
    • 1 cup Swiss cheese, grated
    • 1 cup cheddar cheese, grated
    • 1 pie crust

    Preheat the oven to 375°F. Unroll premade pie crust or using a homemade recipe, place crust in a 9" pie plate, gently pressing to form well to the sides, then set aside.

    In a saucepan, melt the butter and sauté the onions until they become soft and translucent. Set the onions aside to cool slightly. In a large mixing bowl, whisk the eggs with the half and half, and season with salt and pepper. Add the diced ham, shredded cheese, and sautéed onions to the bowl, stirring to combine.

    Pour the mixture into the pie crust and transfer to the oven and bake until the filling is set and the top is lightly golden, about 40 to 45 minutes. Allow to cool slightly before serving. Enjoy!

    Stores up to 3 days in the refrigerator (covered well), or can be frozen up to 2 months if wrapped well.
