    La Crema’s Cabernet Sauvignon represents a patchwork of both mountain and valley vineyard sites. The fruit is carefully selected from sustainably farmed vineyard blocks across the most coveted Sonoma County appellations for Cabernet: Alexander Mountain, Alexander Valley, Dry Creek Valley, and Bennet Valley. The mountain fruit creates a concentrated wine, while fruit from the valley floor contributes to the smooth, softened texture. Together they create a win that is much more than the sum of its parts...harmonious, integrated, and gastronomic.

    In creating La Crema’s Cabernet Sauvignon, La Crema Winemakers Craig McAllister & Lisa Valtenbergs applied Pinot Noir philosophies to Cabernet Sauvignon, employing a gentler winemaking approach. This includes lighter toast profiles in the oak, lower fermentation temperatures and reduced pump over times than typically used with Cabernet Sauvignon to not over-extract and create an inviting Cabernet Sauvignon that is elegant and approachable. Because of the fruit forward style, this is a wine that is intended for early consumption but is structured enough that it will age beautifully for 5-10 years.

    Fruit is brought in from the estate vineyards in the Alexander Valley to offer some of the darker and more dense tannins in the blend. With the composition of other Mountain and Valley vineyards, blended with Merlot, this helps to add riper and softer fruit expressions to provide wine length and balance. All the vineyards used are Certified Sustainable.
