Hamburger Soup Recipe: Easy and Delicious!

This hamburger soup recipe is a family favorite. It is requested several times a year, especially on cool, rainy days around here. I make my recipe in the instant pot but you could also use the stove top or a slow cooker to make it. You will need the following ingredients:

    Recipe:

    2 teaspoons of oil

    1/2 cup of diced onions

    1 lb of ground chuck

2 cloves of garlic, diced finely

    2 tablespoons of tomato paste

1 quart of diced tomatoes (I use homecanned tomatoes but you can also use store bought)

    1 quart of beef broth

    3 cups of potatoes, diced

    2 carrots, diced

    salt and pepper to taste

Place the instant pot on the saute function and add the oil when it gets hot. Now add the onions and ground chuck and cook it until the beef is browned through. Carefully drain the grease and return this to the pot.

Add the garlic and turn the saute function off. You do not want to burn the garlic.

Add the potatoes, carrots, tomato paste, tomatoes, beef broth, salt and pepper and stir until this is mixed together.

Place the lid on the instant pot and press the manual setting and cook for 10 minutes. I let mine do a slow release at least 10 minutes before I release the pressure.

Ladle this soup into bowls and serve. Enjoy!

Note: You can add whatever vegetables you enjoy to this soup and cook it the same amount of time.

If you chose to use the stove top or the slow cooker just brown the ground chuck before you add the rest of the ingredients and cook this until the potatoes and carrots are cooked throughly.

I like to serve this hamburger soup with a side of my homemade cornbread. (Recipe will be linked below)
