Blueberries and Cream Sheet Pan French Toast
Ingredients:
2 Tbs. butter, melted
3 eggs
2 (5 oz.) containers blueberry yogurt (Greek or regular)
Zest of 1 lemon
8 slices brioche bread (pre-sliced is typically available)
Brush or rub melted butter all over surface of large baking sheet.
Crack eggs into large baking pan and add yogurt, lemon zest and ¼ cup water. Whisk vigorously until totally combined. Lay bread slices into yogurty custard, turning them over to fully coat both sides, and let them sit for a while.
Adjust oven rack to middle position, and preheat to 375°F.
In small bowl, stir together sour cream, lemon juice and a couple teaspoons of maple syrup to taste. Set aside.
Place soak bread slices on buttered baking sheet. Bake until very golden brown on top, and cooked, 30 to 35 minutes.
Top with fresh blueberries and sprinkle with turbinado sugar, if using. Serve with lemony maple cream and extra maple syrup on the side, if you like.
