    Bayou Shrimp Pasta - an Easy Recipe for Dinner in 30 Minutes!

    Near where we live in Lake County, Florida, there is a waterfront restaurant that serves a meal called Bayou Shrimp Pasta. It's one of my favorites. My husband felt he could recreate the meal at home, and he did. I think it's even better than what we've had in the restaurant where we dine.

    30-minute stovetop meals are great after a long day. Here's how easy it is to make Bayou Shrimp Pasta over Fettuccine:

    Ingredients:

    • 16 oz fettuccine
    • 2 tbsp olive oil
    • 1 lb shrimp pre-cooked, peeled & deveined
    • 7 cloves garlic minced
    • 3 tbsp Old Bay Seasoning
    • 12 oz mushrooms thinly sliced (optional - I make it with and without)
    • 7 oz sundried tomatoes Alessi Premium Julienne Cut in olive oil (drained the olive oil, did not use)
    • 2 cups half n half
    • 2 cup Parmesan cheese shredded

    Directions:

    • Cook the pasta according to the package directions. Drain. Reserve some of the pasta water if you need to thin the sauce.
    • Place 2 tbsp olive oil in the skillet. Heat until hot.
    • Add in the minced garlic & drained sundried tomatoes. Cook for 3-4 minutes.
    • Add in the mushrooms. Cook for 2 more minutes.
    • Slowly add in the half n half.
    • Stir in the Old Bay Seasoning.
    • Add in about half of the parmesan cheese. Bring to a boil, stirring frequently. Once this boils, reduce heat to medium-simmer.
    • Gradually start adding in the remaining Parmesan cheese while stirring. Add just enough to get the sauce creamy without being too thick. You may not need to use all of the cheese.
    • Add the cooked, peeled & deviened shrimp to the sauce. Heat 1 minute.
    • Remove the sauce from the heat. Taste and adjust if necessary (salt or more Old Bay Seasoning). If the sauce is too thick, slowly add some reserved pasta water, stirring to combine.
    • Drain the fettuccine.
    • Add the fettuccine into the sauce, stirring thoroughly.
    • Serve and enjoy!
