    Honey Garlic Shrimp Lo Mein

    Here's what you'll need to make 4 servings:

    Ingredients:

    • 1 lb raw shrimp, peeled and deveined
    • 2 Tbl olive oil, for cooking
    • 2 Tablespoons minced garlic
    • 2 teaspoons minced fresh ginger
    • 1/2 teaspoon crushed red pepper flakes, optional
    • 1 Tablespoon olive oil
    • 1/2 cup honey
    • 1/3 cup soy sauce
    • 2-3 Tbl cornstarch
    • 1/3 cup water
    • 2 Tbl sesame seeds, optional

    Lo Mein:

    • 1 pound lo mein noodles (fresh, if possible)
    • 1 cup steamed broccoli, for serving
    • 1 cup shredded carrots
    • 1 cup snow peas, trimmed
    • 2 cups mung bean sprouts
    • 1, 8 oz can water chestnuts, drained

    Place the shrimp in a resealable bag or a medium-sized bowl.
    To prepare the marinade, combine the garlic, ginger, red pepper flakes, olive oil, honey, and soy sauce in a small bowl or liquid measuring cup.
    Pour half of the marinade over the shrimp, massaging the bag or stirring to evenly coat the shrimp. Set aside the remaining marinade. Marinate the shrimp in the refrigerator for 15 minutes.

    Heat olive oil in a medium skillet over medium heat. Remove the shrimp from the marinade and add them to the pan, reserving the excess marinade. Cook for about 1 minute, then flip the shrimp for about 1 more minute. Remove the shrimp from the pan. Add cornstarch to the remaining marinade, whisking to ensure there are no lumps, then add to the pan and simmer until it thickens. Add the fresh lo mein* and gently toss to loosen up, then add your veggies of choice (shredded carrots, snow peas, water chestnuts, bean sprouts, broccoli, etc.) Top with sesame seeds and enjoy!


    *Notes:

    The lo mein I usually buy is a "heat and eat" variety. Not all of them are, so if yours isn't, cook the noodles according to package directions, then add to the sauce.

    Alternatively, you can simply serve the shrimp over steamed rice.
