    Frosting Ingredients:

    • ¾ cup mascarpone cheese, softened
    • ¾ cup powdered sugar
    • ½ cup heavy cream
    • 1 teaspoon vanilla extract
    • Cocoa powder (for dusting)

    Cookie Instructions:

    1. In a medium bowl, whisk together the flour, espresso powder, baking powder, baking soda, and sea salt.
    2. In a separate large bowl, mix the melted butter with both sugars until smooth.
    3. Add the egg and vanilla, stirring until everything is well combined.
    4. Gradually fold in the dry ingredients until the dough just comes together.
    5. Scoop 2-tablespoon portions of dough onto a parchment-lined baking sheet, spacing them evenly. Refrigerate for at least 1 hour.
