    Delicious Meatloaf with Sweet and Tangy Glaze

    Do not be fooled by the short ingredient list. This meatloaf is delicious and packed with flavor. It's super easy to put together too! This goes so fast at our house that I usually double or tripple the recipe. For starters though, here's what you'll need to make a loaf sized portion:

    Ingredients:

    • 1 1/2 lbs ground beef
    • 1/3 - 1/2 cup Italian breadcrumbs
    • 1 egg
    • 1 small vidalia onions or 1 small type sweet onion, finely chopped
    • 1 teaspoon table salt
    • 1/4 teaspoon black pepper
    • 4 tablespoons ketchup
    • 1/2 - 2/3 cup whole milk or half and half

    SAUCE

    • 4 tablespoons apple cider vinegar
    • 2 -4 tablespoons dark brown sugar, packed
    • 1/2 cup ketchup


    Preheat oven to 350 degrees.

    Combine all meatloaf ingredients in a mixing bowl. Adjust the consistency with milk or Half & Half so that it is plump but not runny. Do not over mix!

    Transfer the mixture into a loaf baking dish and smooth out the top.

    Mix the sauce ingredients in a small bowl. Pour 1/3 of the sauce over the top and sides of the meatloaf in the baking dish. You may need a pastry brush or back of a spoon to coat well.

    Bake the meatloaf for 1 hour to 1 hour 15 minutes, or until it is cooked through and reaches an internal temperature of 160°F. Check about halfway through baking and carefully tilt loaf pan over a large bowl to remove excess grease if desired. Top with another third of the sauce and return to oven to finish cooking.

    Remove from oven when done. You may add the rest of the sauce to the top or serve on the side. (I tend to double the sauce recipe to use extra on the side.)

    Let the meatloaf rest for a few minutes before slicing. Serve with baked or mashed potatoes and enjoy!
