    Delicious Coconut-Pecan Cookies with Chocolate Chips

    I have no idea where these cookies got their name, however because of how they look that's what we called them. The cookies are dropped into mounds of added delicious chocolate chips, coconut, and pecans and are full of flavor. Great with a cold glass of milk.

    Shopping List:

    • 1 2/3 cups all-purpose flour
    • 3/4 teaspoon baking powder
    • 1/2 teaspoon baking soda
    • 1/2 teaspoon salt
    • 3/4 cup butter, softened
    • 3/4 cup packed brown sugar
    • 1/3 cup granulated sugar
    • 1 egg
    • 1 teaspoon cinnamon is optional
    • 1 1/2 teaspoons vanilla extract
    • 1 cup milk chocolate chips (or whatever you prefer) or raisins
    • 1 cup flaked coconut
    • 1 cup chopped pecans, walnuts, or another nut you prefer

    Directions

    1. Preheat the oven to 375 degrees F (190 degrees C).
    2. Sift together the flour, baking powder, baking soda, and salt and add to a mixing bowl then set this aside.
    3. In a clean mixing bowl beat the butter, brown sugar, and granulated sugar until light and fluffy around 3 minutes.
    4. Beat in the egg then add the vanilla.
    5. Mix in the dry ingredients.
    6. Fold in the chocolate chips, coconut, and pecans.
    7. Roll dough into 1-inch balls and place the cookies onto an ungreased baking sheet ( I prefer to use parchment paper so I don't worry about anything sticking).
    8. Bake for around 10 minutes.
    9. Cool on a baking sheet for 2 minutes before removing.
