What sets this Mexican pizza apart is its balance of textures and flavors. The tortillas are fried until crisp, serving as the base, while the refried beans and seasoned ground beef create a hearty layer. The enchilada or taco sauce provides a zesty tang, and the melted cheddar cheese adds just the right amount of richness. Top it all off with fresh tomatoes, black olives, green onions, and your favorite hot sauce for an irresistible dish.

This recipe is easy to customize. Add spicy jalapeños for a kick or swap out the beef for chicken or a plant-based alternative to make it your own. You can even layer in guacamole or sour cream between the tortilla layers for an extra creamy texture.

Mexican pizza is perfect for any meal or occasion, and best of all, it’s quick to prepare. This dish can easily be doubled for a crowd and is just as good the next day if you happen to have leftovers. Serve it with your favorite dipping sauces, or enjoy it as a satisfying, standalone meal.

    Mexican Pizza Recipe

    Ingredients:

    For the tortillas

    • - 1/4 cup vegetable oil
    • - 16 corn tortillas (6-inch)

    For the Mexican pizzas

    • - 2 cups refried beans, warmed (16-ounce can)
    • - 1 teaspoon vegetable oil
    • - 1 pound ground beef
    • - 1 tablespoon taco seasoning
    • - 2 cups enchilada sauce (or use taco sauce)
    • - 8 ounces cheddar cheese, shredded
    • - Toppings: diced tomato, sliced black olives, green onion, hot sauce
    • - Salt to taste

    Instructions:

    Oven Method:

    1. Heat the 1/4 cup vegetable oil in a large skillet over medium-high heat. Fry each tortilla until golden and crisp, about 1 minute per side. Drain on paper towels and season with a pinch of salt. Set aside.

    2. In the same skillet, heat 1 teaspoon of vegetable oil and add the ground beef. Cook, breaking up the meat with a spatula, until browned and fully cooked. Drain excess fat. Stir in taco seasoning and a splash of water, cooking until well combined and fragrant.

    3. Preheat the oven to 375°F. Arrange half of the tortillas on a baking sheet.

    4. Spread a layer of warmed refried beans over each tortilla. Top with the seasoned ground beef and another tortilla. Spread a generous layer of enchilada sauce or taco sauce over the top tortilla.

    5. Sprinkle shredded cheddar cheese over each pizza and add toppings of diced tomatoes, black olives, and green onions as desired.

    6. Bake in the oven for 10 minutes, or until the cheese is melted and bubbly.

    7. Serve with your favorite toppings like hot sauce, sour cream, or guacamole, and enjoy!

    Air Fryer Method:

    1. Preheat your air fryer to 375°F. Brush a light coat of oil on each tortilla and air fry them in batches for 4-5 minutes until golden and crisp. Flip halfway through for even cooking. Remove and set aside on paper towels to drain excess oil.

    2. In a skillet, cook the ground beef in 1 teaspoon of vegetable oil, breaking it up until browned and fully cooked. Drain any excess fat and stir in taco seasoning and a bit of water to combine. Simmer until well mixed.

    3. Spread a layer of warmed refried beans over half of the air-fried tortillas. Top each with seasoned ground beef, then place another tortilla on top. Spread a layer of enchilada sauce or taco sauce over the top tortilla.

    4. Sprinkle with shredded cheddar cheese and top with diced tomatoes, black olives, and green onions.

    5. Place the pizzas back into the air fryer (depending on the size of your air fryer, you may need to do this in batches) and cook at 375°F for 3-4 minutes, or until the cheese is fully melted and bubbly.

    6. Remove from the air fryer, serve with your favorite toppings, and enjoy!
