    IHOP Fluffy Pancakes

    There are many restaurants that got their start in California. One of those restaurants has been a favorite breakfast stop for decades. It's name is the International House of Pancakes, fondly known as IHOP.

    The first IHOP was opened on July 7, 1958, in Toluca Lake, California, near Los Angeles in LA County. It soon became the place for good breakfasts that were served all day. Even though they had several types of food, lunch items and waffles, the king of their menu was their fluffy pancakes.

    They were so popular, for the larger breakfasts they actually added two of them on the side. They also used to have several different types of syrups on each table, including blueberry, strawberry, and butter pecan to go with their house syrup. Now you have to ask for it, and they will serve it.

    Here is a copycat recipe for the beloved pancakes.

    Ingredients

    • 1 ¼ cups sifted all-purpose flour
    • 1 teaspoon baking powder
    • 1 teaspoon baking soda
    • 1/8 teaspoon salt
    • 1 large egg beaten
    • 1 ¼ cups buttermilk
    • 2 tablespoons salted butter melted
    • 3 tablespoons sugar

    Instructions

    • In a large bowl, sift together flour, baking powder, baking soda, and salt.
    • In a small bowl, combine egg and buttermilk. Whisk together until blended. Add to the flour mixture, stirring only until smooth. Add melted butter and sugar to the batter and whisk until combined.
    • Heat a griddle or nonstick skillet over medium-low heat. Grease griddle with cooking spray or butter. Drop 1/4 cup batter on pan and spread into a 5-inch circle. Cook until bubbles begin to form on the surface and edges begin to brown. Gently flip and continue to brown the other side. Repeat with remaining batter.
    • Serve with butter and warm syrup. Enjoy!
