    Ingredients for the Meatloaf:

    • 1 ½ lbs lean ground beef
    • ½ green bell pepper, finely chopped
    • 1 small white onion, finely chopped
    • ½ cup seasoned bread crumbs
    • 1 large egg
    • ½ cup shredded mozzarella cheese
    • ⅓ cup pizza sauce
    • 1 garlic clove, minced
    • 2 teaspoons Italian herb blend
    • ½ teaspoon onion powder
    • ¼ teaspoon garlic powder
    • 20 pepperoni slices, chopped
    • 2 tablespoons fresh parsley, chopped
    • ¾ teaspoon salt
    • ¼ teaspoon black pepper

    Topping:

    • 2 tablespoons pizza sauce
    • Italian herb blend, to taste
    • ¼ cup shredded mozzarella cheese
    • 15 whole pepperoni slices

    Directions:

    1. Preheat the oven to 350°F. Grease an 8"x5" loaf pan and line a larger baking sheet with foil to catch any drippings.
    2. In a large bowl, mix together the ground beef, bell pepper, onion, bread crumbs, egg, mozzarella, pizza sauce, garlic, Italian herbs, onion powder, garlic powder, chopped pepperoni, parsley, salt, and pepper. Combine until well-blended.
    3. Form the mixture into a loaf and press it evenly into the prepared loaf pan.
    4. Bake for 55 minutes, then carefully remove the pan from the oven. Use a spoon to skim off any excess grease.
    5. Brush the top of the meatloaf with pizza sauce, sprinkle with Italian seasoning, and layer the shredded mozzarella. Arrange the remaining pepperoni slices on top.
    6. Return to the oven and bake for an additional 20 minutes, or until the cheese is melted and slightly golden.
    7. Allow the meatloaf to cool for 10 minutes before slicing into 8 equal portions and serving.
