Capriotti’s Sandwich Shop, renowned for its hand-crafted cheese steaks and delectable subs, is making its debut in Boise with a flagship location scheduled to open this December. The new restaurant will be located at 200 North Highbrook Way in Star, marking the first of three Capriotti’s locations that will soon enrich the Boise community.

Local entrepreneurs Brian and Amanda Robertson, who have been loyal Capriotti’s patrons for over three decades, are spearheading this exciting expansion. The Robertsons, previously known for their successful operation of Robertson Installations in Las Vegas, relocated their family to Idaho in 2023. Recognizing a strong demand for their favorite sandwich chain in Boise, they eagerly took on the challenge of bringing Capriotti’s to their new home.

“Since moving to Boise to be closer to family, we’ve met plenty of people who have traveled out to Las Vegas purely to get their fix of Capriotti’s,” said Amanda Robertson, a military veteran. “Given our experience in construction and passion for the brand, Amanda and I were confident that we could make quick work of bringing Capriotti’s here. In fact, we’ve already secured a lease for our second location, which will open later in 2025.”
