    Ingredients:

    • 2 lbs pork shoulder (cubed)
    • 1 lb pork liver (optional for a milder taste)
    • 2 bell peppers, chopped
    • 1 large onion, chopped
    • 4 cloves garlic, minced
    • 3 green onions, chopped
    • 3 cups cooked rice
    • 1 tablespoon Cajun seasoning
    • Salt and pepper to taste
    • Natural sausage casing

    Instructions:

    1. Prepare the Meat: In a large pot, add the pork shoulder, liver (if using), bell peppers, onion, and garlic. Cover with water and bring to a boil. Lower the heat and simmer for about 2 hours until the meat is tender.
    2. Grind the Mixture: Once the meat is cooked, remove it from the pot and grind it, combining it with the cooked vegetables.
    3. Season: Stir in the Cajun seasoning, salt, and pepper, then fold in the cooked rice. Adjust seasoning to taste.
    4. Stuff the Sausage: Use a sausage stuffer to fill the casings with the pork and rice mixture. Twist into links.
    5. Cook the Boudin: Simmer the sausage in water for about 10 minutes or until fully cooked. For a crispy exterior, you can grill or smoke the sausage after boiling.

I just grind the pork and finely chop the liver, add the veggies and cooked rice. I turn the mixture into sausage links, then cook thoroughly. sometimes I hot smoke them first, then roast them in the oven.
