    Creamy Chicken Broccoli and Stuffing Casserole

    Here is the easiest weeknight casserole for a super busy lifestyle that's satisfying and pure comfort food. This simple basic recipe for the casserole is so versatile and interchangeable with ingredients you can make a new casserole dinner every time you make it. Keep a few pantry ingredients on hand IE: cream of mushroom or chicken soup, boxed stuffing mix, and pre-cooked frozen or fresh boneless meats and you'll have dinner on the table in less than 30 minutes. This is the perfect side dish or whole meal and terrific for bringing to potlucks, picnic gatherings, and that last-minute dinner invitation.

    Shopping List:

    • 2 cups of cooked shredded, cubed or sliced chicken chicken (we used rotisserie chicken and have also used frozen chicken breaded tenders cut up)
    • 2 cans of cream of chicken soup
    • 1 10 ounce frozen package of broccoli precooked and drained
    • 1/4 cup of whole milk
    • 1 - box chicken stuffing mix (prepared to package instructions)
    • 2 cups shredded cheddar cheese or another cheese shredded you prefer

    Directions:

    1. In a large bowl mix the soup, milk, chicken, broccoli, or another mix-in and pour this into a greased 10 x 10-inch baking casserole.
    2. Top with half the cheese and the prepared stuffing and the remaining cheese on the stuffing mix.
    3. Bake for 25 minutes until bubbling and cheese is melted.
    • Mix-ins:
    • Broccoli florets chopped
    • Cauliflower chopped
    • Chopped or sliced carrots
    • Mushrooms sliced
